TAFFY APPLE PIZZA
1 pkg. Refrigerated Sugar cookie dough – softened (18 oz.)
1 pkg. cream cheese – softened (8 oz.)
½ cup packed brown sugar
¼ cup creamy peanut butter
½ tsp. Vanilla extract
2 medium Granny Smith Apples
Ground cinnamon
¼ cup caramel ice cream topping
½ cup peanuts – chopped
Preheat oven to 350*F. For crust, shape cookie dough into a ball. Place dough in the center of a pizza pan with lip. (use parchment paper for ease in clean up!) Flatten with palm of hand and then using a floured rolling pin, roll dough to 14 inch circle, until about ¼ inch thick.
Bake for 14-16 minutes. Cool for 10 minutes. Loosen cookie from pan. For toppings, combine cream cheese, brown sugar, peanut butter and vanilla – mix well.
Peel, core and slice apples. Spread mixture over the top of your cookie and then arrange apples on top of your mixture. Sprinkle with cinnamon. Heat caramel and drizzle over apples. Chop nuts and spread over apples. Cut pizza into 16 wedges.
This is one of my favorite sweet caramel apple treats… ENJOY!
